Cowboy Oatmeal Cookies

Sadly, I consider myself a chocolate chip snob...I've never gravitated toward a chocolate chip cookie I haven't liked...I came across this recipe and it just sounded good... so I "cowboy'd up" (*groan*) and gave it a shot.... I was nervous the whole time... until I tasted the dough (I know, I know)...and at that point, knew that I had a winner. These were awesome... they were chewy... they were crunchy... they were light...and the butterscotch chips a pleasant change. The only thing is that the first batch got stuck to my cookie sheet... so I had to stop and scrub that off... but then I broke out the parchment... and from then on, it was smooth sailing. This is a keeper! Thank you for this wonderful cookie!!

Taco Seasoning I

Ran out of taco seasoning while cooking and found this to mix up and add to the dish. Made some more for a couple of extra meals and put in a small tupperware in the spice drawer. Never going back to the packs!!

Best Ever Banana Bread

This is truly THE best banana bread I've made... I'm always looking for new ways to make it... then returning to the tried & true in my BHG cookbook...but this is the first time I've seen BUTTERMILK as an ingredient! I made the recipe exactly as written, save the one change I made to the sugar that I subbed with splenda for my husband who watches sugar intake. He raved about it (I suggested decreasing the sweetener because I personally found it a little TOO sweet... and he strongly disagreed)... and while I personally noticed the splenda before the bread had cooled, I did NOT notice it afterwards, with a little spread on it. Just a note, it took less than an hour in a glass bread pan. Thank you for such a wonderful idea!
